12 large strawberries12 red-frilled toothpicks or regular toothpicks and 12 mini marshmallows1 cup
powdered sugar12 fudge covered cream filled chocolate cookies or white Oreos12 miniature semisweet red-hot chocolate chips24 miniature semisweet chocolate chips1 (8 ounce/225g) package
cream cheese, softened12 canned
pineapple chunks (1 inch/2.5cm pieces or the size of the strawberry) or 1 loaf (11 ounces/310g) frozen
pound cake, thawed (use whichever available)

Method 1: Santa without Toothpicks1
Wash the strawberries.
Hull them (remove the green stem) by using a knife or a tube huller. To hull with a knife, simply insert the knife on the top of the strawberry and gently press the stem with your thumb. Now move the knife in a circular manner to remove the stem. The removed part will look like a cone with the base containing the stem. Make sure you do not hull too much of the strawberry. After hulling, look for any solid matter inside the strawberry by inserting the knife and checking the tenderness of the strawberry. Remove any solid parts if present inside the strawberry.

Cut each strawberry into half lengthwise.

Place a chunk of pineapple or the pound cake along the length of the strawberry. Gently press it to embed it into the strawberry.

Make the icing. Beat the cream cheese and powdered sugar together with a mixer in a bowl on high speed until fluffy.

Scoop the mixture into a frosting or plastic bag fitted with a small star tip. Use a tip such as #17 or #18.

Pipe the icing.

First, pipe around the strawberry top (the rim of the Santa’s hat) to form the fur around the Santa's hat.Next, pipe the beard and downside of the front face of Santa to form the beard.7
Apply a little frosting at the back of the mini chocolate chips. Place them on to the Santa to form Santa's eyes. Similarly, apply frosting at the back of the red-hot chocolate chips and place them on Santa to form the mouth of Santa.

Refrigerate all the miniature Santas for about 90 minutes before serving.

Serve the Santas by placing them on the top of fudge covered cream filled chocolate cookies or white Oreo's.

Method 2: Santa with Toothpicks1

Stand the Santa body up with the largest end at the bottom. Place a chunk of pineapple or pound cake on top and secure it with a toothpick to form the face. Trim any excess pineapple. Attach the strawberry tip (hat) on top of the pineapple.

Make the icing. Beat the cream cheese and powdered sugar together with a mixer in a bowl on high speed until fluffy.

Scoop the mixture into a frosting or plastic bag fitted with a small star tip. Use a tip such as #17 or #18.

Pipe the icing to accentuate Santa’s hat, beard, and coat buttons.

Apply a little frosting at the back of the mini chocolate chips. Place them onto the Santa to form Santa's eyes. Similarly, apply frosting at the back of the red-hot chocolate chips and place them on Santa to form the mouth of Santa.

Edit TipsWhile cutting the strawberries, make sure they are cut with no inclined surfaces, to avoid any irregular shape while fixing the pineapple or the cake chunks in between the strawberry pieces.If you don't have red-hot chocolate chips for the mouth, then use the additional chocolate chips or don't make the mouth at all. Santa will still look cool without a mouth.If you are using pound cake then first trim the crust of the pound cake and then cut them into small chunks of about 1 inch (2.5cm) length.You can also add details to the Santa berries by using frosting, such as by creating a belt little below the beard of Santa. Make sure to add details to the belt by using different
colored frosting. You can also use a little dusting with powdered food coloring to create a blushing Santa or add cotton candies as beard to your Santa berry to give it a realistic look.Make sure the toothpicks have fixed all the components together, otherwise the bases may fall.Method one is easier when compared to method two, but all together they both are unique Santas; one can even make both of them and serve them together to add variety to your Santa berry presentation while serving.
