If you leave this recipe to steep for weeks, you'll end up with a gorgeous syrupy amber liquid which is deeply infused in Christmas pudding spices and flavours and deceptively strong. This would make a gorgeous gift plus you also get your own treat––a jar of vodka soused dried fruit! A very Merry Christmas indeed.

Edit Ingredients1 bottle (about 700ml/23.6 fl oz) vodka250g/8.8 oz dark brown sugar100g/ 3.5 oz mixed peel250g/8.8 oz sultanas150g/5.2 oz raisinsGrated rind and juice of 1 orange1 tsp almond essence6 cloves2 cinnamon sticks2 vanilla beans, split, seeds scraped1/2 tsp nutmeg1 tsp mixed spice (aka pudding spice or pumpkin pie spice)

Edit Steps1Place all of the ingredients in a large bowl. Cover well with plastic wrap or lid. Reserve the vodka bottle and cap for reuse later.

2Set aside in a cool place for 1 week, stirring once a day. Your pantry, food cupboard or an out-of-the-way bench space is ideal for storage during the week.

3Strain the contents through a very fine sieve, pressing down well to extract all the liquid. Keep the fruit for separate use in desserts or baking. (The fruit can be stored in a jar in the refrigerator up to a week.)

4Pour the liquid back into the vodka bottle. Keep a steady hand so as not to lose any! A funnel will make the pouring a whole lot easier.

5Screw the cap on tightly and keep in the refrigerator. The vodka can be stored in the refrigerator for up to 6 months.

6Serve. Serve with mince pies, Christmas cake or any other delicious holiday season fare. Cheers!

Edit TipsFor an added treat, you can remove the cloves, cinnamon sticks and vanilla, and fold the remaining macerated fruits through softened ice-cream to create a very boozy pudding. This Christmas pudding vodka is most delicious mixed with ice cold lemonade!
